<p>
Chef Phelix Gardner joined our culinary team this month to bring local flavors to tables of The Grand America. Our Executive Vice President of <a href="http://www.littleamerica.com/">Grand America Hotels and resorts</a> said, “We welcome the addition of Chef Gardner to our culinary team, and look forward to the expertise he has in utilizing local ingredients and creating one-of-a-kind menu offerings that will appeal to both local guests and business travelers alike.” </p>
<p>
Chef Gardner started working in restaurants when he was 15 years old, where cooking quickly became his lifelong passion. His past accomplishments include Sous Chef for The Peabody Hotel in Orlando, Florida from 2004 – 2006. In 2006 he made the cross-country trip to become the Chef de Cuisine at The Cabin Restaurant in Park City, Utah from 2006 -2009. His most recent venture was as Executive Chef at The Wild Grape New West Bistro located in Salt Lake City.</p>
<p>
In his new role at The Grand America, Chef Gardner will entice his guests with a perfect combination of bold flavors, creative menus and gracious service. Chef’s passion for seasonal menus and ability to utilize local ingredients will be an asset to our restaurant for both locals and visitors to enjoy. </p>

<p><strong>Grand Caesar Dressing</strong></p>
<p>Ingredients:</p>
<p>•2 garlic cloves</p>
<p>•1/8 cup Dijon mustard</p>
<p>•2 poached egg yolks</p>
<p>•2 anchovie fillets</p>
<p>•1/8 cup lemon juice</p>
<p>•1 Tbsp. Worcestershire sauce</p>
<p>•1 tsp. Tabasco or to taste</p>
<p>•1/2 cup shredded parmesan cheese</p>
<p>•1/2 cup red wine vinegar</p>
<p>•3 cups olive oil</p>
<p>•Salt and pepper to taste</p>
<p>Directions:</p>
<p>Combine everything but the oil and cheese and blend in a blender. Add the oil slowly to make an emulsify. Add water slowly if the consistency becomes too thick.</p>

<p>This recipe uses berries. Any fresh fruit may be used. </p>
<p>

Fruit Salad </p>
<p>
1 pt Strawberries </p>
<p>
1 pt Blueberries </p>
<p>
1 pt Raspberries </p>
<p>
1 pt Blackberries </p>
<p>
1/4 c Honey </p>
<p>
1/8 c Water<br />
</p>
<p>
In a small saucepan, warm Honey and Water.<br />
</p>
<p>Combine Berries in a bowl and toss with Honey Syrup.<br />
Drain and plate. </p>

Chantilly Cream </p>
<p>
2 c Heavy Cream </p>
<p>
3/4 c Sugar </p>
<p>
1 t Vanilla Extract </p>
<p>

Lady Fingers:</p>
<p>
3 Eggs, Separated </p>
<p>
6 Tbsp. Granulated Sugar </p>
<p>
3/4 C Cake Flour </p>
<p>
6 Tbsp. Powdered Sugar<br />
</p>
<p>
Preheat oven to 350F and grease 2 cookie sheets and line with parchment </p>
<p>Combine Egg Whites with Granulated Sugar and whip in a mixer until firm peaks form. Meringue should be shiny and smooth. <br />
With a rubber spatula, spoon the meringue into a large mixing bowl. <br />
Combine Egg Yolks with Powdered Sugar and whip in a mixer until the mixture is ribbony. It should be thick enough to sit on itself. <br />
Spoon the Yolks into the large bowl with the Whites. <br />
Sift the flour into the bowl and gently fold everything to combine. </p>
<p>
Using a piping bag and a large plain piping tip, pipe strips of batter on to the cookie sheet about 5&#8243; long and 3/4&#8243; thick. Leave about 1.5&#8243; between each strip.<br />
Bake for 10 minutes then rotate the pan.<br />
Bake until golden brown, about 5 more minutes.<br />
With a small metal spatula, remove the lady fingers and allow to cool on a cooling rack.</p>
